This salad is easy to make. Great as an appetizer during the hot summer months.

3 large bell peppers
2 large tomatoes
2 tbsps vinegar or lemon juice
1 tsp ground cumin
3 tbsps olive oil or salad oil
1/2 cup parsley (finely chopped)

Roast or broil peppers.
Peel the skin, cut in half and clean the inside.
Dice the peppers and place them in a salad bowl.

Peel and dice tomatoes.
Add tomatoes to the peppers.
Add ingredients.

Toss, cover and chill.
